S’mores Pancakes

Two words: s’mores pancakes! Sounds delicious, right? Just imagine the gooey chocolate and the sweet taste of marshmallows melted with graham crackers… YUM! Well what if I told you they were dairy-free? (and nut-free, and can be made gluten-free; read below*) That’s right! Dairy-free s’mores pancakes!

I was really feeling this one. I thought, “Oh man! S’mores pancakes? How delicious!” My sister, Hunter, has a dairy allergy, so growing up learning how to order food for someone with an allergy at restaurants, or altering certain recipes to not contain dairy has made me more conscious about my eating. I never realized how many items have dairy, and how unhealthy half of my meals are (the s’mores pancakes are a good example, although with all these substitutions, they are healthier than normal!)

Having a dairy allergy may be extremely difficult sometimes, but that doesn’t stop my sister.

There are so many alternatives that taste great!


While making these s’mores pancakes, I realized that some of my favorite delicious meals could be made without dairy easily if I just add soymilk, or earth balance butter, or applesauce! It’s amazing!

I really enjoyed these pancakes because my sister can eat them, and I mean who wouldn’t want s’mores pancakes. They’re delicious!


So during the making of the pancakes, I actually fell asleep… Hmm!

No, I didn’t burn the house down… but my sister ended up having to make the pancakes for me!

Ha ha, you wonder how that happened?

It is VERY difficult to wake me up early… I usually wake up around 11p.m., and on occasion 2 p.m. and Hunter wanted me up at 8 a.m. to cook!! So I was about a quarter of the way done with the pancakes when all of a sudden… I got lightheaded and thought I was going to pass out!

It was very traumatic; however, others (cough, cough… HUNTER!) believed I was being dramatic and “overreacting.”

So, I got some water and laid down on the couch. And naturally, I drifted back to sleep. Hunter ended up making the rest of the pancakes, and later on I was accused for ditching her! Oops… Oh well, the pancakes were delicious! I didn’t really make them, but the idea was a good one!


A challenge while making these pancakes was the altitude; we made them while we were still in Telluride where the altitude is about 10,000 feet above sea level. The pancakes took much longer to cook at that altitude, and the inside did not cook all the way. So if you live in a high-altitude place and cook a lot… I feel ya.

Although there were some challenges, there were also some positives!

The pancakes were out of this world and they were dairy-free! It cannot get better than that!!! In the end, I think that these pancakes had a different twist, and they tasted delicious! Besides the fact that I fell asleep, Hunter made them just as delectable as I would have!

Making these pancakes caused me to become more aware of allergies in general, and I’ll definitely be cooking more things without dairy, or eggs, or nuts, or gluten, or soy in the future!


Having an allergy is hard, but that shouldn’t stop anyone! In the world, people will have problems to face and Hunter and Vivian, and all of you who read this blog have to face the problem of being allergic to something. It is difficult to live with, but talking about it and sharing what you learn helps others become more conscious of their eating habits and learn how to help someone they know who has an allergy.

Living in the same household as someone with a dairy allergy has helped me eat better, and learn more about what other kids my age might have to face every day, and how to try and make it a little bit easier, and a lot more tastier!


S'mores Pancakes
Serves: 4-6
  • 2 cups original Bisquick pancake mix
  • 1 cup milk (I used soymilk)
  • 2 eggs
  • ½ cup Honey Maid graham cracker crumbs
  • ⅓ cup Enjoy Life semi-sweet chocolate mini chips
For Toppings:
  • 1 box Honey Maid Graham cracker crumbs
  • 1 package Enjoy Life semi-sweet chocolate mega chunks
  • 7-ounce Jet Puffed Marshmallow Crème
  1. In a large bowl, whisk the pancake mix, milk, and eggs together until smooth yet thick batter forms.
  2. Then slowly add the chocolate chips while stirring.
  3. Add the graham cracker crumbs while stirring.
  4. In a large skillet, cook the pancakes on medium heat. Pour ¼ cup of the mix onto the skillet, about the size of a small hand (we used Hannah’s hand to measure, ha ha). Cook until bubbles form consistently all over the pancake, and flip onto other side. Cook until both sides are light brown, occasionally flipping.
  5. Add toppings to make the pancakes look like “s’mores”.
  6. And enjoy ☺

*Bisquick also offers gluten-free mix, just leave out the graham cracker crumbs or make your own gluten-free graham crackers :)
