Lily’s Famous Hummus Slaw

Meet Lily…

She’s twelve-years-old and loves to needle felt, paint, and do anything active; especially running!

Lily is the creator, inventor, mastermind, genius, okay you get the gist… behind the best cole slaw I’ve ever had!

ingredientseditLily lives a dairy-free, gluten-free lifestyle.hummus2editWhen Lily comes home from school, she’s always hungry! So she created a yummy snack that only requires a bowl, spoon, and some simple ingredients. It’s an awesome way for her to create something to eat all on her own, that doesn’t require an oven or stove, and is super healthy!hummus1editLily puts her hummus slaw on gluten-free crackers, chicken, hamburgers, and basically anything that needs a flavorful topping! She also eats it right out of the bowl.

This recipe is a totally awesome snack that anyone can enjoy, no matter what your age! So if Mom or Dad’s busy (or in Lily’s case.. her big sister, Alyssa, who lovesss to cook) just head on into the kitchen and whip up some of this awesome slaw!

P.S. As if this doesn’t have you running to the store buying some hummus and slaw already, this will: it’s also dairy-free, gluten-free, and egg-free! (It could also be nut-free if you or your child is not allergic to chickpeas.)

Lily's Famous Hummus Slaw
Recipe type: Snack
Serves: 4-6
  • 1-2 bags of slaw
  • 1½ cups of hummus
  • Juice from half a lemon
  • Salt and pepper to taste
  • Water (to moisten the slaw)
  1. Pour slaw into medium sized bowl. Add some water to make the slaw moist (around 2 tablespoons).
  2. Then add the hummus, lemon juice, and salt and pepper to taste.
  3. Mix it all together and enjoy!
The more slaw you add, the less creamy it will be. The less slaw, the more creamy. Same goes with the water.

Feel free to leave us a comment, telling Lily how much you liked the slaw, and what you put it on top of!

As a mom of four children who have arthritis and autoimmune disease ithas been hard work to find goods that won’t cause inflammation. The journey though has led my children to be empowered and seek out food options on their own. Lilys hummus slaw is yummy!!!
