Fresh Apple Cake with Eggless Eggnog Frosting
  • 2 eggs
  • 2 cups sugar
  • ½ cup oil
  • 1 teaspoon vanilla
  • 2 cups regular flour, sifted
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 4 cups peeled, diced apples (I used organic granny smith)
  • 1 cup chopped pecans
  • ½ cup shortening
  • ½ cup almond milk
  • 2 cups powdered sugar
  • ¼ cup eggnog (I used Tara Stiles recipe, link below)
For the cake:
  1. Grease and flour 9x13 pan.
  2. Preheat the over to 350 degrees Fahrenheit
  3. Beat the eggs
  4. Gradually add the sugar, oil, and vanilla
  5. Sift in the next five ingredients (flour, salt, baking soda, cinnamon, nutmeg)
  6. Stir in the apples and pecans
  7. Bake for 45 minutes
For the icing:
  1. In a large bowl or stand up mixer, combine the shortening and butter until fluffy.
  2. Add the powdered sugar gradually.
  3. Add the eggnog until the right consistency is reached (fluffy and smooth, but not too wet)
  4. When the cake has cooled, at least fifteen minutes, add the frosting, serve, and enjoy :)
The cake batter will be much thicker than a usual cake. And sometimes the frosting requires more than ¼ cup of the eggnog mix and sometimes less, depends on personal taste too.
