Sweet Potato Gnocchi with Brown "Butter" Sage Sauce
Serves: 2-4 depending on if it's a side or a main dish
  • 1 ½ cups flour (I used gluten free tapioca flour)
  • 2 medium-large sweet potatoes
  • ¼ teaspoon salt
  • ½ teaspoon nutmeg
  • 1 egg (optional)
  • ½ cup Earth Balance butter
  • 2 tablespoons brown sugar
  • ⅓ cup chopped sage
  • Sage for garnish
For the gnocchi
  1. Bake sweet potatoes in the oven on 450 degrees Fahrenheit for 40-50 minutes, or until tender.
  2. Wait until cool, then remove skin and mash in a medium sized bowl.
  3. Add the flour and mix together.
  4. Add salt and nutmeg, mix together.
  5. Add egg if you choose to do so.
  6. Roll into quarter sized balls and press down with a fork just slightly to create the signature “gnocchi” look.
  7. Bring water to a boil and add gnocchi, no more than ten at a time.
  8. Cook them for about five minutes, or until they float to the surface, and remove. Repeat until all gnocchi is cooked.
For the sauce
  1. Heat the sage over medium high heat.
  2. Add the butter and melt it down.
  3. Then add the brown sugar.
  4. Let simmer for five to ten minutes.
  5. Immediately pour onto gnocchi. Enjoy ☺
