Creamy Mashed Potatoes
Serves: 10-12 as a side
  • 3 pounds red potatoes
  • ¾ cups unsweetened non-dairy milk
  • 1 teaspoon garlic powder
  • 4 tablespoons vegan butter
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • chopped chives, for topping (optional)
  1. Place the potatoes in a large pot and fill with water until they are completely covered. Bring the water to a boil and cook until the potatoes are tender and you can easily pierce them with a fork, around 20-25 minutes. When the potatoes are cooked, drain the water.
  2. Pour the milk, garlic powder, butter, salt, and pepper into the large pot and mash together until smooth. Top with chives and serve warm as a side.
