Maple Bacon Cookie Sandwiches



I guess this might sound like a fall type recipe, but to me, bacon and maple syrup is delicious anytime of the year.

Like, who boycotts maple syrup and bacon in the summer, just because it’s summer?

Not me, that’s for sure.

So I’m going to celebrate maple syrup and bacon RIGHT NOW. And I do not regret my decision at all.

The O-M-C Smoothie


I’m feeling like I’m a five-year-old stuck in a twenty-year-old’s body today. So I’m going to be silly.


Have I ever mentioned before how much I am absolutely, irrevocably, permanently, eternally, and any more words that come up when I type forever into the thesaurus website, in deep, mad love with anything Disney?

You probably assumed in my Eating in Disney posts, but now ya know for sure. I’ve loved Disney since I first heard “little town, it’s a quiet village” or “if only I could make my father understand” or any of the other amazing Disney movie songs. Everything about it.

Some of my favorite memories include when my dad pushed my sister and I around in the stroller as we saw our favorite princesses and ate popcorn on main street, waking up extra early to go to the MGM (now Hollywood Studios) with my best friend and her family hours before my mom and sister even thought of waking up, spending my fifth birthday, fifteenth, sixteenth, and many more at the most magical place on earth, and most recently taking my favorite little human for a few days of enchantment and wonder, or even being half way across the world in Italy and having a Disney Movie Marathon in a little Italian house with friends, or taking a train to Disneyland Paris in the smoldering hot July.

Mara’s Summer Peach Salsa



This fruit dip blows my mind.

You know when a super simple dish can be made to be the most delicious thing you’ve ever tasted? That’s how I feel about this dip.

Vivian’s mom, Mrs. Mara, made it for a get-together we had the other day and literally every.single.person raved about it. I had just enough time to take pictures and then poof; it was gone.

This is an absolutely no fail kind of dish to bring to a party to be guaranteed happy phrases like “this is amazing” and “you have to share the recipe with me” and “we are inviting you to every event now” from the party-goers. That’s how good it is.

Mini Watermelon & Cucumber Stack Salad


For your weekend enjoyment…


You know when you feel like a week has just thrown you under and you’re drowning? Yeah. That’s been my week.

I’ve been working on a super exciting project all week, and I’m now totally ready to crawl into my bed all weekend and get through the next season of Bones (I’m on season 5, can it get any more exciting than this? Booth and Brennan = the best couple on tv).

But before I do that, I am going to reward myself by devouring this cutie of a salad.

Fresh arugula, cherry tomatoes, cucumber, watermelon, tangy creamy vegan dressing, what? Is it possible to have a salad that amazing?

Easy Breakfast Pizza



When I think of breakfast time, my mind instantly goes to that scene in Cheaper by the Dozen where breakfast is just total chaos, minus the frog of course.

I’m in a family of four, so you would think breakfast was a quiet affair for us. But ever since I was little we’ve always had tons of people over for Saturday morning breakfast. We haven’t done it as much since I’ve gotten older, but there’s usually always someone stopping by for breakfast. I love how our house is open and welcoming, and how there’s always movement and excitement to wake up to.

I’m sure you’ve gathered by now that my family and I (and Vivian’s family) are super duper world travelers. Like, we travel a lot.

We love it, we live for it, and this time we are on a school trip in Arizona!!! We started the trip in Pheonix, then Flagstaff, Page, now we’re at the Grand Canyon, and tomorrow we leave for Sedona. It’s been a whirlwind, but it’s also been a blast! Roasted Brussels Sprouts with Tangy White Sauce



Come on, I see that face.

And this is not the time for it.

I honestly don’t understand the whole “ew brussels sprouts” thing.

I remember watching an episode of Franklin the Turtle when I was like 5, and I remember the episode being about brussels sprouts. Franklin’s mom made them for dinner and he thought they were the grossest thing ever, but I think at the end he ended up trying them and loving them.

Vegetarian Mexican Breakfast Casserole



The only time I eat casseroles are for Thanksgiving at my Aunt’s house every year. My mom is not a lover of casseroles so she never makes them, but my Aunt always does, and I love them.

My favorite one she’s made is french toast casserole last Thanksgiving, it was dairy-free and soo good (remind me to ask her for the recipe).

I started thinking that I want to contribute to this casserole thing. They are easy to make, fun to eat, and can be healthy when made with the right ingredients. I’m not a big breakfast person so I thought I’d try a breakfast casserole, and then the mexican idea came up in my head. Yummy yum yum. So here’s my shot at a Mexican Breakfast Casserole.

Crunchy Apple & Sunbutter Sandwiches



Well, I discovered two things today:

1. Sometimes no matter how good a food item tastes, it can still look awful.

2. I absolutely stink at slicing and coring apples.

Lesson learned, life goes on.

I know these pictures are not my best, but seriously, these apple sandwiches taste good enough to make up for my awful slicing skills.

I’ve seen a lot of apple sandwich recipes, but they all have peanut butter in them and that’s no bueno for our nut butter allergy friends. So I introduce you to sunbutter, my new favorite alternative nut butter. It’s so good. I could eat the whole dang jar.

Maw Maw’s Vanilla Pound Cake



“This is the best pound cake I’ve had since Maw Maw made it herself.”                                                 ~Some of my favorite words I’ve heard from my mom.

Maw Maw was my great grandmother. Unfortunately, I never got to meet her, but she lives on through the wonderful memories of my family. I’m sure she was a great woman and I would have loved to know her. She was my Grammy’s best friend, much like how my mom is my best friend.

There is never a negative word to say about her. She was a beautiful lady.

And she made some dang good pound cake.
