I have survived many experiences this week.

Remember that conference I was talking about in my last post? Well it was a success! Vivian did an amazing job talking about her dairy allergy and the blog. She was so nervous!

We also showed our popsicle video we made for Vita Coco this summer and everyone loved it! We got to talk with all different kinds of educators from all over the world about blogging and dairy allergies and education. We learned so much and had a blast!

The other experience I survived from was a WATER SPOUT THAT TOOK OUT MY HOUSE! Not literally, but I live on the third floor of my house and my door started shaking like crazy.

My sweet dog, Emma, just stared at me like, “this is it” and my mom and sister started screaming.

One of our neighbors came running over and when she opened the door all the other doors sucked open and banged against the house.

Our furniture is in the pool, tree branches are in my sister’s room along with some kid’s toy from down the street, our grill is flipped upside down, and all our outdoor pillows are in the garden in the backyard.

So I like this thing. It’s called autumn. We’re pretty tight. It lets me make caramel, and gives me apples, and butternut squash soup, cinnamon toast, and lots of fancy trail nuts. Let’s just go ahead and call us BFF’s. It’s official.

No but seriously, can I just use this here blog to only talk about autumn for the rest of autumn and how cool it is and, oh my gosh I gotta calm down.

Please tell me you understand my insane in the membrane when fall/autumn comes. Yayay. And what’s better?

Lunchbox Monday: The Italian Box

It’s another beautiful Monday! And guess what I just saw in my planner? TOMORROW IS THE OFFICIAL START OF AUTUMN. Is this for reals? Pinch me, I must be dreaming. But seriously, I’m so excited.

I just got home from a week in Dallas and I am loving.this.weather. I had a great birthday and am ready to carry on with some awesome recipes this week! I also went to some of the best restaurants and can’t wait to share all about them. You’re in for a treat.

Let’s talk about this lunchbox for a minute. I ate this thing for dinner it was so good. Like gobbled it right on up. I made my favorite turkey quinoa meatballs for the sandwiches, and used my favorite Mario Batalli tomato sauce, and zoodles can’t be beat, and melon wrapped prosciutto?

Can I please go back to Italy now?

This is for all my vegan friends with vegan kids out there. I love you guys. I really do.

This is also for all of you who’d like to switch it up and try something new, something delicious, and something that is kind to our beautiful, wonderful animals. Not only are you helping them, but you’re enjoying an amazing lunchbox as well! Win win happy happy!

I loved eating making this lunchbox because it’s filled with all sorts of goodies like golden and chocolate oreos, seven grain crispy tenders, tofu pigs in a blanket, butterfly snack packs, and a side of tangy delicious jungle juice.

I want to go to school just so I can take this lunchbox somewhere and eat it. Or trade it for some good stuff? I know how you roll. Yeah, I’m talking to you.

This week, Vivian & Me is filled with some extra special posts! I am bringing you a sportylicious football party recipe, and I’m also in Dallas this week (where I’ll be celebratin’ my birthday!) so get excited for the restaurant post.

I can’t even handle how good the food is here in Dallas, by the way. Spot on. It also helps that the biggest Whole Foods I’ve ever seen in my life is five minutes down the road.

And I just downed a vegan cookies & cream chocolate cake slice. It’s my birthday, okay?

Lunchbox Monday: The Animal Farm Box

Ingredients
  • 4 oreos, golden and chocolate
  • 4 Gardein seven grain crispy tenders, cooked according to directions on package
  • 2 Pillsbury crescent rolls
  • 1 vegan SmartDog, sliced in half
  • 1 handful of raspberries
  • 1 handful of grapes
  • 1 butterfly snack pack
  • Ketchup
For the jungle juice:
  • ¼ cup pineapple juice
  • ¼ cup mango juice
  • ½ cup orange juice
  • ½ cup lemonade
Instructions
  1. Preheat the oven to 375 degrees F.
  2. Wrap the tofu dogs in the crescent rolls and bake for 12 to 15 minutes or until golden brown.
  3. Pour the jungle juice ingredients into a mason jar or thermos and shake up. Store in the refrigerator until ready to drink.
  4. Place each food into a separate lunchbox compartment. Place ketchup in a separate sides compartment.
  5. Enjoy.

I have a special treat for you. Close your eyes and imagine you’re sitting by the pool overlooking the mediterranean ocean on the outskirts of a small city in Greece with your family. Now take a bite out of this lunchbox. Good stuff right there.

This is just as perfect of a lunch for mom or dad as it is for the kiddos. Killing two birds with one stone? Bingo.

I hope you enjoyed last week’s first lunchbox post, I sure enjoyed eating it. As the summer is winding down I thought a tropical box would be the perfect way to end it, with the beach, and the sun, and the sand. Are we really sure we’re ready for winter yet, summer? Maybe just stick around a little bit longer.
