The Best Lemon Supreme Cake

Lemon-Cake-1

Lemon-Cake-1

Look, I’m not going to throw out “best” on here very often, so when I say it I mean it.

This is yet another amazing-delicious-stuff-your-face recipe provided by Mrs. Mara, Vivian’s momma. It’s not even the lemons that really make this cake, it’s the moistness level. Is that a word? Moistness? This cake is melt-in-your-mouth moist. Like butta. If any of us could eat butter. And trust me, there’s no butter in this cake.

The lemon flavor in this cake is so refreshing, and by using a dairy-free cake mix as the base, SO.EASY.TO.MAKE. But trust me here, there’s nothing cake mix-y about this sucker. It is pure fresh in all directions.

This week I’m heading down to Naples, my sister will be in Orlando and my parents will be in Atlanta. This is the first time that we will all three be in different locations. And it’s really weird. We do a lot together.

I was homeschooled growing up, so was my sister, and we always have done everything together. So it’s been a huge adjustment (mostly for me. I don’t like change very much.) traveling without my family, and us all being in different locations this week is just crazy to me. I know I’ll get used to it sooner or later, but right now it kind of gives me anxiety.

I’m one of those people who genuinely loves being around my family.

Even though we’re small in numbers, we’re basically like a walking party all the time.

Refreshing Mango & Lime Juice Popsicles

ML-Pops-1

ML-Pops-1

I don’t really know anything better than a hot summer day by the pool slurping on fast-melting popsicles. I love how sometimes when it’s so hot (especially being a Florida girl) all I can really have to quench my thirst is a super cold and delicious concoction of frozen fruit juice.

Popsicles have really “taken off” as the “cool summer snack” in the last few years, so I’ve loved being able to play around with different types of flavors and make popsicles that are such big hits with my favorite little people (and big people too!).

Recently, my cousins were visiting (how cute are they?) and were looking for a snack after swimming in the pool all morning. I brought out these mango and lime juice popsicles and Gabriela basically devoured one in about five minutes flat. I filled some of the popsicle molds only half way, and that was the perfect size for Gabs to eat it all before it melted.

Seconds, anyone?

Chewy Coconut Brownies

I’M BACKKK!

CCB-3

Sorry sorry for taking a little hiatus there last week. Between working on my exciting new project and getting packed, it’s just been crazy busy!

Packed you say? For where, Hunter, you ask?

Well let me tell you… My friend McKenzie and I have embarked on an adventure! We have just arrived in Hilton Head Island, South Carolina. Next, we are heading to Charleston, NC, then Asheville, NC, Nashville, TN, and finally Grammy’s house in Moulton, AL. I know, exciting stuff.

CCB-4

I, of course, had minor (er, I mean major) panic attacks all day today.

I am not very independent, so it was definitely hard for me to leave my family behind and head out on the open road.

But I’m excited for these next few weeks just traveling around and experiencing something new.

And I’m even more excited to be experiencing it with my best friend. I mean, how great is that?

CCB-2

And I wish I would have made enough of these brownies to take with me. These things are delicious. I got this recipe from my aunt, who still has a ton of my Grandma’s old recipes, and I couldn’t wait to try it.

I’ve made them about 4 times now and they are quick & easy, and tasty! I love how the coconut kind of melts into the brownie, and the nuts are the perfect crunch.

Yum is all I can say.

CCB-5

Well, it’s a beautiful day here in sunny Hilton Head! And don’t worry, there will be many picture posts to come (if you like that sorta thing), and I will also do my best to make up for my lack of posting last week.

By the way, I’ve lived at the beach for 10 years and hardly ever actually go down to the beach. But here, I’m excited to go to the beach. What is up with that? I know, I’m such a weirdo.

And beach spoiled? Yeah, I know that too.

I have a special request, can someone please bake me some coconut brownies and deliver them to me? Like, while I’m sitting on the beach?

Oh you’re too kind.

Chewy Coconut Brownies
Author:

Ingredients
for the "crust"
  • 1 cup flour
  • ½ cup water
  • 4 tablespoons powdered sugar
for the brownies
  • 2 eggs, beaten
  • 1½ cups brown sugar
  • 2 tablespoons flour
  • 1 cup chopped nuts (I used walnuts and they were delish)
  • ¾ cup coconut flakes
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
Instructions
  1. Preheat the oven to 350 degrees F.
  2. In a small bowl, mix the "crust" ingredients together and spread into a greased 8x8 inch pan.
  3. Bake for 12-15 minutes.
  4. When the crust is done baking, combine the brownie ingredients in a large bowl and spread over the top.
  5. Return to the oven and bake for 20 minutes.
  6. Cut into bars while hot and enjoy.
Notes
If you have a strong oven, you might need to reduce the temperature and bake time for the crust. You want it to come out chewy, not hard.

P.S. Who else is pumped that summer is here?!

Yep, you heard that right. I’m in LA! Whoop! Anyone reading this live in LA? Let’s meet up, say hey!

I’m here for just a quick trip to help celebrate the launch of my dad’s new product, pretty cool stuff. But don’t worry, I have a delicious recipe for you while I’m here!

Cherry cheesecake popsicles, need I say more?

These are beyond easy peasy lemon squeezy to make, and taste just delish. I love the mix of the tangy cherry filling with the creamy “cheese”cake in the center. YUM.

Maple Bacon Cookie Sandwiches

Maple-Bacon-Cookie-Sandwiches

I guess this might sound like a fall type recipe, but to me, bacon and maple syrup is delicious anytime of the year.

Like, who boycotts maple syrup and bacon in the summer, just because it’s summer?

Not me, that’s for sure.

So I’m going to celebrate maple syrup and bacon RIGHT NOW. And I do not regret my decision at all.

Are these two girlies the cutest or what?

I can’t look at their sweet, smiling faces and not crack a big grin.

My sister, Hannah, is on the left and one of her closest friends, dating back to about five-years-old, Sydney, is on the right.

I love it when they pose for me, and I especially love it when they liked what I make. And in this instance, I won on both!

Maw Maw’s Vanilla Pound Cake

Pound-Cake-2

“This is the best pound cake I’ve had since Maw Maw made it herself.”                                                 ~Some of my favorite words I’ve heard from my mom.

Maw Maw was my great grandmother. Unfortunately, I never got to meet her, but she lives on through the wonderful memories of my family. I’m sure she was a great woman and I would have loved to know her. She was my Grammy’s best friend, much like how my mom is my best friend.

There is never a negative word to say about her. She was a beautiful lady.

And she made some dang good pound cake.

Vegan Pecan Turtles

Happy Monday Peeps!

Chocolate-Turtles-1

I’m warning you now, this week will be filled with desserts, sweets, and deliciousness posts. I just happened to find myself with some really yummy and successful dessert recipes in the same week… so you’re getting a week of sugaaaa! But isn’t that what’s most hard for someone with an allergy anyway?

I mean, I’m not complaining. Are you?

And to start off the week of sweets I give you vegan pecan turtles that will knock your socks off. My mom’s absolute favorite dessert are turtles. Whenever we are at an ice cream shop she always goes for the pecan turtles.

I was totally inspired after reading about all of the veganized candies, including turtles, on one of my favorite food blog’s Fork & Beans.

So I thought I’d create my own in honor of my ahhmazing mama!

So I have a friend named Chloe.

She’s pretty awesome.

And she and her mom have this crazy cool lifestyle blog called PopCosmo.

Chloe texted me a few weeks ago asking if I could make a pink cupcake or cake that would look good with these really amazing cake toppers she was making.

I, of course, said YES! And we ended up creating this gorgeous basil infused pink grapefruit cupcake with a vegan buttercream frosting and candied grapefruit on top.

Booshk. (Vivian’s official word for anything that is over-the-top spectacular!)

Chloe posted how to make the toppers on her blog, and I have the cupcake recipe.

So please say hello to a party in a cupcake…

Dark Chocolate Peanut Butter Chia Pudding

Guys. Guys. Guys. Dark Chocolate Peanut Butter Chia Pudding. Guys.

I have officially fallen in love with chia seeds. I’m a full blown chia seeds activist.

I wasn’t sure at first. It took three other tries to find success in this pudding, but I think every single effort was well worth it. Dark chocolate (in this case Enjoy Life semisweet chocolate chips that taste like dark chocolate. boom.) and peanut butter is the perfect mixture for this pudding.
