I’ve broken into the beautiful winter break to bring you these breakfast parfaits. Maple cinnamon quinoa parfaits with caramelized bananas and blueberries to be exact.

They taste like a healthier version of banana foster and they are oh so good. When I took that first bite, I had that eyes closed happy moan moment because I knew this was a winner.

It’s definitely on the sweeter side, so it would be perfect for a funky dessert too.

But I was thinking, fancy brunch with kids because I don’t know what kid wouldn’t love these parfaits.

Caramelized Bananas and Blueberries

I’m spending my winter break traversing (and occasionally turning) down the slopes of Telluride, Colorado. I’m happier than a pig in slop (too weird?) and am extremely pumped to be spending another winter break out here in the most best place on earth (next to Disney World, of course). The snow is falling down, my family is all together, and life is totally blissful.

I’ve spent my days snowboarding, reading, baking cookies with my little cousin, and playing go fish; it couldn’t get any better.

Bear with me on the whole photo thing. Obviously I’m not home with my usual props and I just got a fancy new lens for my fancy new camera!

Hello easiest breakfast to make ever. I’m glad we’re friends.

Let’s talk about this french toast. Cause’ it makes me super happy.

Not only is it mixed with Silk’s dairy-free holiday nog, and some eggs, and nutmeg, and cinnamon, and a little salt, but it’s also topped with powdered sugar, maple syrup, marshmallows, and anything else that your heart desires.

The actual toast of the french toast combo is day old challah bread, and the way it soaks up all the yumminess of the french mixture is delicious.

Then you just fry it on the skillet and voila. French toast for days. [Read more…]

When your loving aunt and uncle bring you fresh, sweet, juicy, apples all the way from North Carolina’s apple orchards, you have an obligation to find something to do with them that’s equally as sweet and juicy.

These apple cinnamon crumble muffins are perfection. Moist inside with the apple all softened like in a good apple pie, with a crunchy cinnamon sugar crumble top. It’s like the perfect breakfast and dessert all wrapped in to one.

Dip it in your coffee, or my personal favorite, hot chocolate. The crumbs will soak up all the liquid and will then turn into mushy little tops that you can practically drink off the muffins.

I don’t know what possessed me to put blueberries in this hash, but it was the best decision I’ve ever made. It’s like the combo of the crunchy sweet potato and then the pop of the juice blueberries, hello.

I know blueberries are almost out of style for the season, but grab those last few boxes and get kickin’.

It’s like fresh summer meets fall and creates the perfect moment of bliss and perfection in a breakfast hash. It’s like you stumble into the kitchen with your glasses on and messy top bun, and you somehow end up being a genius morning chef who makes cool breakfast combos. And the maple bacon?

Drool worthy.

Baking the bacon with the maple syrup makes the bacon almost caramelize/candy the maple syrup into it, and there’s this crunch and chew that can’t be topped. I think the maple bacon makes the segway from sweet potato to blueberry.

Get in muh belly, oats.

These apple and cinnamon oats are a staple in my house. We have them for almost every Thanksgiving/Christmas morning, fresh from the slow cooker and so tasty. I don’t even know how it’s possible for oats to taste this good.

I feel like a total cheat when a recipe tastes this good but is this easy, but hey, love me for it. I don’t even know how to describe the oats. They’re creamy but still have a little chewiness to them, so flavorful while being the perfect morning porridge. They are just the quintessential comfort breakfast cold weather food.

Um, hello. Have you been outside today?

It’s literally heaven on my doorstop. I had one of those mornings where I was wearing my stretchy yoga pants and the biggest sweatshirt I could find, and walked outside to the nicest breeze of my life, and literally my entire mood changed. Not that I was in a bad mood before, it was just like the weather made me feel like I was floating. Does that even make sense?

I’m stuck in this amazing weather haze. Nothing can compete with the first morning of fall weather. Nothing.

It wins.

I’ve also completely planned my future someday wedding in a matter of two days. This weather does that to me, okay? I instantly get into my nurturer homemaker miss my whole life is planned because of how happy I am persona. Go with it.

Don’t even get me started on what happens to me when the Christmas lights go up. I’m counting down the seconds.

And while I enjoy all things autumn, I am going to chow down on my favorite oatmeal eva. I love that oatmeal is so diverse. It can be a more savory kinda meal, or a super sweet meal (it’s fall, okay? It’s my nesting period). Not to brag, but I topped my oatmeal with the absolute perfect amount of almond milk, cinnamon, brown sugar, nuts, and dried fruit. ohemgee.

Cinnamon and brown sugar make the best combo for oatmeal toppings.

Or honey if you swing that way.

I love nothing more than a packed house of my cousins, aunts and uncles, grandparents, parents, sister, and twenty of our closest friends, all snuggled around the fire watching one of my dad’s favorite movies on an early morning when no one has anything to do because it’s the winter break, and we are all digging into this oatmeal.

Apple & Cinnamon Overnight Oats

Serves: 4-6
 
Ingredients
  • 2 apples
  • 2 cups Irish steel cut oats
  • 8 cups water
  • 1 cinnamon stick
for toppings:
  • almond milk
  • brown sugar
  • cinnamon
  • nuts (pecans, pistachios, walnuts, etc.)
  • dried fruit (cranberries, cherries, blueberries, etc.)
Instructions
  1. Peel the apples and remove the seeds. Chop into cubes.
  2. Place all the ingredients into a slow cooker and put on low for 8 hours.
  3. Top with your favorite toppings and serve warm.
Notes
I used gala apples, but feel free to use whatever you want or is local to you.

Let’s throw a party! I’m talking full-blown hello my online invisible little ghost friends party complete with yummy punch and only allergy friendly chocolate desserts, and for sure these donuts.

I’m talking mounds of donuts. These amazing circles of deliciousness took me ten tries. Literally 10 batches of mixing and whisking and pouring and painstakingly baking as I watched them fall, and fall, and become hallow each time.

Imagine my face just contorting into pure horror at the 15 minute mark as I turned the dreaded oven light on to see my beautiful batch of hard work and love go down the drain.

I’m not a breakfast eater, but I’d eat one of these for breakfast every morning in a heartbeat.

Creamy dairy-free yogurt, colorful fruit loops, and juicy fresh fruit makes for a wholesome, grab-and-go, perfect breakfast to ring in the new school year. Hop on that bus your first day of school with a breakfast pop in hand and someone will come up to you and be like,

“can I try that?”

And you’ll be like, “sure, here.”

And she/he will try a bite and be like, “that’s the best breakfast ever! I want my mom to make that for me!”

And then you’ll be best friends for the next ten or so years, sharing breakfast pops every morning.

When I was a vegetarian/vegan, I used to crave biscuits and gravy. A lot. I don’t eat breakfast much, but when biscuits and gravy are offered, I devour my meal.

Before I learned to cook for myself, I always wished I could have adaptions of delicious meat and dairy filled meals, I didn’t know that I could easily make them myself.

Thanks to our society now putting importance on the food we consume, there’s more vegan meat options than ever. So when I found vegan ground sausage (at Publix, by the way), I instantly wanted to make biscuits and gravy.

Add to them being gluten-free, and you have an absolutely delicious and eco-friendly and allergy-friendly scrumptious breakfast.

When I think of breakfast time, my mind instantly goes to that scene in Cheaper by the Dozen where breakfast is just total chaos, minus the frog of course.

I’m in a family of four, so you would think breakfast was a quiet affair for us. But ever since I was little we’ve always had tons of people over for Saturday morning breakfast. We haven’t done it as much since I’ve gotten older, but there’s usually always someone stopping by for breakfast. I love how our house is open and welcoming, and how there’s always movement and excitement to wake up to.
